Once known for its pool tables, the Red Brick Bar and Grill evolved into a home-cooked style restaurant under the guidance of Chef Jason Page.
Page, whose grandfather cooked for military brass in the Merchant Marines, brings a disciplined approach to the kitchen. “It takes practice, dedication, discipline, patience in the pursuit of the best ingredients,” he says, drawing parallels between his craft and his brother David’s career in law enforcement.
The menu at Red Brick reflects Page’s commitment to elevating local tastes. “I would say the community has a simple meat-and-potato outlook on food, so I take that and put a little flare into it to make it seem a bit more upscale,” Page explains.
This approach shines through in popular dishes like the Blue Ribbon Burger and a mac and cheese that locals rave about. But Page isn’t content with just pleasing current palates. “What drives me to elevate my menu is to keep things new,” he states. The restaurant’s seasonal menu and Friday Specials are designed to gently push diners out of their comfort zones.
Our family has enjoyed the Blue Ribbon Burger and the macaroni and cheese at Red Brick Grill numerous times. Our son says the burger is “the best in town”. Chef Page’s commitment to making dishes from scratch shines through, especially in dishes like the macaroni and cheese. The white sauce that forms its base is a testament to his culinary skill – no mixes or powders here. Instead, Page combines real milk and cheese with a hefty dose of passion over a hot stove, resulting in a dish that keeps us coming back.
Page’s food philosophy centers on fusion. “I believe what sets my cooking apart from others is my ability to bring flavors from around the world and make it work with something familiar,” he explains. New ideas are thoroughly tested on family and staff before making it to the public menu.
Despite industry trends, Page stands firm on maintaining the integrity of his dishes. “If I could change one thing about the restaurant industry, it would be the ‘Have it your way’ mentality,” he argues, believing that each menu item is carefully crafted to work as a whole.
The Red Brick Grill isn’t just about food; it’s part of the fabric of Blair. When tornados hit the area last spring, the restaurant held benefits to support those affected. It’s this community spirit, combined with evolving cuisine, that keeps people coming back.
“I would want to be known for how my food brought people together,” Page reflects, “because that’s what I feel food does for people.”
